I’m curious, since my vegas are undervolted and only pulling 140watts, is it safe to run them off one pcie cable?

I would not.
Imagine the possible changes in a flight sheet, changes in PCI order, OS upgrades, miner upgrades, etc., where over clocks can get wonky.
Cabling and power supplies are the sources of too many fires and burnt up stuff. Protect the most expense pieces of your rig.

FYI, your vega’s likely aren’t really pulling 140W. They generally run 30W higher at the wall in my experience. That puts you over 150W
